Fresh & Fruity Spring Tart with Andros Chef

Ingredients:

  • 1 pre-made tart crust
  • 200 g fresh seasonal fruits (strawberries, raspberries, kiwis, apricots)
  • 2 tbsp Andros Chef apricot glaze
  • 3 tbsp Andros Sweetened Strawberry Puree

 

For the homemade pastry cream:

  • 250 ml whole milk
  • 50 g sugar
  • 2 egg yolks
  • 20 g cornstarch
  • 1 tsp vanilla extract
  • 20 g unsalted butter

Instructions:

1. Prepare the pastry cream:
In a saucepan, heat the milk until just simmering. In a bowl, whisk the egg yolks, sugar, and cornstarch. Gradually pour the hot milk into the egg mixture while whisking. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, add vanilla extract and butter, then let cool completely.

2. Prepare the strawberry layer:
Mix the Andros Sweetened Strawberry Puree with a little water (about 1 tbsp) to create a smooth sauce. Optionally, you can heat it slightly to enhance the flavors.

3. Assemble the tart:
Spread the cooled pastry cream evenly over the pre-made tart crust. Then, gently drizzle or spread the strawberry puree over the pastry cream.

4. Add the fruits:
Arrange the fresh seasonal fruits on top of the pastry cream and strawberry puree.

5. Glaze for a glossy finish:
Warm the Andros Chef apricot glaze slightly and brush it over the fruits for a shiny, sweet finish.

6. Serve & Enjoy!
