Chef-owner Julien Royer of three Michelin-starred modern French restaurant, Odette, has kindly shared with us his recipe for a Le Pounti — a traditional French pâté made from chopped vegetables and meat.

Ingredients:

  • 300g pork lard
  • 100g Kurobuta minced pork
  • 1 white onion, finely chopped
  • 25g parsley, finely chopped
  • 200g Swiss chard leaves
  • 1 garlic clove
  • 100g white flour
  • 400g whole milk
  • 4 eggs
  • 160g dried prunes, soaked overnight in water
  • Salt and pepper to taste

Instructions:

  1. Mixed in the chopped lard, minced pork, onion, parsley, Swiss chard leaves and garlic
  2. Season the mixture with salt and pepper, cover with cling wrap and set aside for 1 hour in the fridge
  3. Add flour into a large bowl and make a well in the centre. Pour the milk into the well and add a pinch of salt and pepper. Mix slowly to avoid creating bubbles, then stir in the eggs.
  4. Combine the meat mixture with the flour mixture until you get a smooth consistency, the final mix should have a nice green colour.
  5. Preheat the oven to 180 degrees Celsius. Grease a terrine mould with melted butter and sprinkle some flour onto it.
  6. Pour the mixture into the terrine mould, leaving some space on top
  7. Press the prunes into the cake with your fingers
  8. Bake for 10 minutes, then cook for another 40 minutes at 180 degrees Celsius
  9. To check if it is done, slide a knife into the cake. If it is cooked, the edge of your knife will be dry and hot.
